Super Kale & Basil Pesto

This Super Kale & Basil Pesto is extra nutritious and packed with so-called super food kale, naturally! Now don’t judge a book by it’s cover… It is amazingly delicious and impressive to serve! Not a fan of kale? Don’t despair, with all the flavour combinations going on in this pesto, the kale is truly transformed.

I’m sure I’ve just scratched the surface of what can be done with this pesto in the Super Greens & Beans Pesto Pasta – a great dish for Meatless Monday or for incorporating more vegetarian meals into your week. Share in the comments below: how do you use pesto?

INGREDIENTS:
40g parmesan, cubed (or see specific method below)
2 garlic cloves
50g kale, torn
16g basil
60g raw, unsalted walnuts
30g pinenuts
1/2 tsp sea salt
2 tbs olive oil
2 tbs fresh lemon juice

Thermomix –

Place parmesan (chopped into 2cm cubes) & garlic into the bowl and chop for 10 secs, speed 5.
Add the walnuts & pinenuts. Chop for 8 secs, speed 4.5.
Add the kale, basil, & salt. Chop for 10 secs, speed 5.
Scrape down the sides, then add olive oil & lemon juice. Combine for 10 secs, speed 2.

Food processor –

Place the parmesan (use pre-grated, if you don’t have a powerful machine, or chop smaller), garlic, kale, basil, walnuts, pinenuts and salt into the bowl of the food processor. Blitz until finely chopped.
With the motor running on slow, gradually add the olive oil and lemon juice until well combined.
